Vegan Oil Free Oat/ Granola Bars

12 medium bananas, frozen then thawed completely (VERY IMPORTANT!)2 cups no sugar added all natural peanut butter8 tsp. ground cinnamon18 cups old fashioned oats, gluten free2 cups unsalted hulled sunflower seeds2 cups dried cranberries (or any other dried fruit you like)
Whisk bananas, peanut butter, and cinnamon together until they are completely combined and smooth. Fold in oats, seeds, and cranberries until well combined and each oat is covered.
Spread 1/4 of the mixture evenly onto each of four large jelly roll pans (lined with wax paper). Two at a time, bake for 30 mintues in a preheated 350F oven until firm.
Once removed from oven, cut each pan into 16 bars (I like to do 4x4). When completely cooled, remove bars from pan, wrap each bar in wax paper, and stick in freezer.
Serving Size: Makes 64 large bars
