Ingredients
Olive Oil, 1 tbsp (remove)Curry powder, 2 tbsp (remove)Ginger, ground, 1 tbsp (remove)Onions, raw, 1 cup, chopped (remove)Yellow Peppers (bell peppers), 2 pepper, large (3-3/4" long, 3" dia) (remove)Carrots, raw, 1 carrot (7-1/2") (remove)Mushrooms, fresh, 2.5 cup, pieces or slices (remove)Vegetable Broth, 2 cup (remove)*Coconut Milk, 1.8 cup (remove)
Directions
Saute onion in oil, add spices. Add water, broth and veggies. Bring to boil. Add coconut milk and return to boil. Serve
