6 eggs2 Tbsp low-fat milk2 Tbsp maple syrup1 Tbsp Orange Juice1/4 tsp cinnamon1/4 tsp nutmeg1/8 tsp vanilla extract1/2 tsp orange rind8 slices double fiber whole wheat breadbutterpowdered sugar
Blend all the ingredients, dip bread in mixture and cook. Butter can be avoided by using a non-stick pan.
Sprinkle with confectioner's sugar.
Leftovers can be sliced into finger treats for lunches.
