Avocado, 5-6 oz (150g), cut into piecesCherry Tomatoes, 1/2 cup whole, cut in halves Onions, raw, 1/4 cup, slicedParsley, fresh, 1/4 cup, choppedArtichoke Hearts in water, 1-2 pieces (45g)Garbanzo Beans, 1/2 cup, drained and rinsedBlack Olives, 6-8 large, wholeBlack Pepper & SaltLemon Juice, fresh, 1/2 tbsp Olive Oil, 1 tsp
1. Drain and rinse garbanzo beans, olives and hearts of artichokes. Cut avocado and artichokes into bite-size pieces. Slice onions. Cut cherry tomatoes in halves. Chop parsley.
Put everything into a bowl, add whole olives, salt & pepper. Drizzle with lemon juice and olive oil. Mix the salad and cool.
