fresh tomato soup

Ingredients
3 tablespoons olive oil1 red onion chopped2 carrots unpealed and chopped3 cloves garlic8 tomatos chopped coarsley1 1/2 teaspoons sugar1/4 cup basil leaves chopped1 teaspoon salt2 teaspoons pepper3 cups stock3/4 cup heavy cream
Directions
saute' onion, carrot, add garlic
then basil, stock, salt and pepper to taste, bring to a boil, lower heat and simmer uncovered for 30 to 40 minutes.
use food mill or blend and strain then add cream
