100g red, ripe tomato100g chicken breast, cubed1/2 cup chicken stock, low sodium1 cup water1 tsp dehydrated onion1/2 tsp granulated garlicSalt/pepper to taste
In a small sauce pot, put diced tomatoes, chicken stock, water, onion, & garlic. Boil for 2-3 minutes until tomatoes are disintegrating. (At this point, I remove from heat & use an immersion blender to make smooth.)
Add the chicken & boil for another few minutes until chicken is cooked.
Pour into a bowl and add salt/pepper to taste.
