Butternut Squash/Pear/Walnut (1 serving=1 cup)

Ingredients
1 butternut squash, peeled, seeded and cubed (1" cubes)3 firm pears, cored and cubed1/4 cup walnut piecessalt and pepper to taste2 t brown sugar (optional)1/2 t cinnamon (optional)
Directions
Combine cubed squash, pears, walnuts, and olive oil. Spread mixture in a single layer on a sheet pan. Season with salt, pepper, sugar, and cinnamon.

Roast in a 375*F oven for 30 minutes. Stir gently and roast another 15 minutes or until as done as you like it.
