Cucumber Crisps

Ingredients
3 1/2 cups thinly sliced cucumbers3/4 cup of sugar, Stevia can be subed1/2 large onion, sliced thin, I like to use a white onion1/2 medium sweet pepper, red, yellow or orange1/2 cup cider vinegar1 tsp salt1/2 Tbsp celery seed
Directions
In a medium serving bowl, combine all ingredients. Cover and refrigerate for at least 1 hour, stirring occasionally. Serve with a slotted spoon.
