Non Dairy New England Clam Chowder

Ingredients
1 and ½ sticks butter 16 oz Clam juice + juice from clams4 russet potatoes diced to ½ inch2 russet potatoes grated½ carrot, grated1 onion, diced3- 6oz or 1 large cans of minced clams1 cup celery stalks with leaves, minced 1 tbl dried thyme2 tbl fresh parsley2 cloves garlic, minced ¼ cup flourSalt & pepper
Directions
Combine butter and clam juice in a pan over medium heat. Mix in vegetables and cook until tender. Add in other ingredients and use flour or water to improve consistency. Serve immediately, piping hot.
