Kim's Black bean and Barley Salad

Ingredients
Salad Ingredients:3 Cups Cooked Pearl Barley1 cup Frozen Corn1 cup Frozen Peas1 Yellow, Orange or Red Bell Pepper - chopped1 Med. Cucumber1 can unseasoned Black Beans - drained and rinsed1 Avocado - chopped1/4 cup Chopped CilantroDressing:1/4 cup fresh lemon juice1 tsp. salt1 tsp. black pepper1/4 tsp. cayenne pepper2 tbsp Olive oil
Directions
Mix salad ingredients. In a seperate bowl mix Dressing ingredients and lightly mix. Add to salad ingredients and toss. Let marinate for 30 - 60 minutes before serving. Better the next day.
