Easy Orange Glazed Tofu

Ingredients
2 cloves garlic, minced1 block extra-firm tofu, dried and cubed2 tbsp olive oil3 tbsp low-sodium soy sauce1/2 cup reduced-calorie orange juice (like Trop 50)2 tbsp rice vinegar1/4 cup sugar-free orange marmalade (I prefer Polaner for the added fiber)1/2 tsp minced ginger (preferably fresh)1 1/2 tsp cornstarch, dissolved into 3 tbsp water
Directions
Sautee tofu and garlic in olive oil for 3-4 minutes, until tofu is just lightly browned.
Stir in soy sauce, orange juice, rice vinegar, marmalade and ginger, whisking to combine and coat tofu.

Heat for 3-4 minutes, then add cornstarch and water, stirring to combine. Bring to a boil and cook until sauce thickens.

Great over brown rice or with mixed veggies!

Serving Size: divide into 4 equal portions
