Chicken Artichoke Caper Pesto Pasta

6 oz. angel hair pasta1 TBSP olive oil1 medium white onion, sliced thinly1/2 can artichoke hearts, in water2 TBSP capers6 oz. cooked white meat chicken, cut into 1/2" cubes1 additional TBSP olive oil1/4 cup pestosprinkle of parmesan cheesegrated fresh pepper
Boil the water. When boiling, add the pasta - watch carefully as angel hair cooks to "al dente" in 4 minutes. Drain and toss with 1 TBSP olive oil. Slice onions thinly, and cut whole artichoke hearts into 1/8ths or 1/4 artichoke hearts in half.
Pour 1 TBSP olive oil in saute pan. Cook onions until translucent. Add artichoke hearts, capers, and chicken. Toss until warm and remove from heat.
Toss angel hair pasta with pesto, add chicken/artichoke/caper mixture and serve in bowl. Sprinkle with parmesan cheese and grated fresh pepper.
Serving Size: Makes enough for 3 medium portions or 2 large.
