Apple Salad with Chia Dressing

Ingredients
4 C. apple, chopped2 C. celery, chopped2/3 C. dried sweetened cranberriesJuice of 1 lemon2 Tbs. honey2 Tbs. apple juice4 tsp. chia seed1/2 C. water
Directions
Soak chia in water for 2 hours until it gels. Whisk together honey, lemon juice, apple juice, and chia gel. Chop the apple and celery and mix with the dressing and dried cranberries.

    This pic is wrong one, but the recipe is quite good and you can add the romaine, walnuts and scallions like in the pic. That is just how I made mine and am having it with fresh caught salmon seasoned with herbs and lemon. Soo good all sprinkled with just black pepper. Used stevia instead of honey - 6/27/13

    Credibility is lost when the photos seldom (never?) match the recipe. Spark needs to pay attention to this problem
    The classic Waldorf salad has walnuts, and I'll add them when I make this recipe. Like the idea of the chia seeds, tho' - 6/19/13

    Too bad the photo shows walnuts, but is not included in the recipe, and would certainly add to the calorie count! Also, where are the cranberries?? Don't see them, but they are in the recipe. - 6/18/13

    has anyone noticed that this salad has no walnuts but walnuts are in the picture, there are no cranberries in the the picture but are in the recipe, and the dressing in the picture shows as creammy white which is not what you get from the ingredients. Bad to use pic of regular Waldorf !!!! - 2/26/13

    I made the dressing but I did not have apple juice so instead I used pomegranate juice with the Chia seeds honey and lemon and it was delicious! My husband sampled and he said: YUMMO.... I will use this dressing on any number of salads! - 7/1/17
