1 fennel bulb1 apple, diced (skin on is okay)2 oranges, peeled and cut into bite-size chunks1/4 cup dried cranberries1 Tbsp. red wine vinegar1 Tbsp. olive oilDash Salt and Pepper
Thinly slice the fennel bulb. Add chopped oranges, diced apples, and dried cranberries. Stir together the red wine vinegar and olive oil. Pour over the fennel mix and stir. Add dash of salt and pepper to bring out flavors.
