Spicy stir fried potatoes

Ingredients
1 potatoPinch of turmeric1 tsp oil1 tbsp cayenne red pepper (or to taste)salt to taste
Directions
1. Cut potatoes into thin slices (about 1 mm thick - a little thicker than you would for potato wafers)
2. Make a water-based paste of turmeric, cayenne red pepper and salt and keep aside
3. Heat oil in a non-stick pan
4. When the oil is really hot, add in the potatoes. Turn down the heat to a low a flame
5. Keep adding water as required and let the potatoes cook till they begin to turn soft in a closed pan. Stir as required. This take about 5-7 minutes and usually takes about a quarter cup water add in small quantities (around 1-2 tbsp at a time)
6. When the potatoes begin to turn soft, add in the cayenne red pepper, turmeric and salt paste
7. Continue to add water as required and let the potatoes cook. (You will usually need another 2-3 tbsps of water)
8. When the potatoes are cooked (you should be able to cut it easily with your spatula), turn up the flame to high and stir-fry for another minute
