Savory Baked Sweet Potatoes

3 medium sweet potatoes1-2 tsp olive oil (enough to lightly coat baking dish)2 tbsp low sodium soy sauce1 tsp Liquid Smoke (optional but really good!)3 tbsp balsamic vinegarAdd the following spices to taste:CuminCorianderBlack pepperChili powderGarlic powder
Preheat oven to 375. Peel and slice the potatoes into approximately 1/4 inch thick discs. Mix ingredients for the marinade in a dish with a tight-fitting lid, like tupperware. Put the potato slices in the dish, cover, and shake until coated. If you need more marinade, add to taste. Pour 1-2 tsp olive oil into a nonstick baking pan and spread evenly to lightly coat it. Place potato slices in the dish so that each one is fully touching the pan (to ensure even baking). Bake for 10 min on one side; flip with a fork and bake an additional 10 min or until potatoes are tender and beginning to brown.
