Mandarin Orange & Almond Salad

Ingredients
1/4 cup salad oil2 tbsp splenda2 tbsp malt vinegar1/4 tsp salt1/8 tsp almond extract6 cups mixed greens12 oz. mandarin oranges, (or 3 medium oranges, peeled and halved)1 cup thinly sliced celery2 tbsp sliced green onion1/3 cup toasted slivered almonds In screw-top jar combine oil, splenda, vinegar, salt, and almond extract. Cover and shake to dissolve salt and splenda. Chill. Combine greens, oranges, celery, and green onion. Sprinkle with almonds. Pour dressing over and toss gently to coat. Serve at once. Makes 6 1.5 cup servings.

    Add dressing at time of serving. It is best when mixings are evenly coated. David and I would put the fixing in a big ziploc and add the dressing and then shake the bag. - 5/7/16
