New Years Day Black Eyed Peas

Ingredients
2 Tbls vinegar4 cups water + as much as needed for crock pot fillage1 Tbls baking soda3 cups Fat Free Chicken BrothBlack-eyed peas (cowpeas), uncooked, 1 CupBeans, pinto, uncooked, .5 cupHam Steak, cured, boneless, extra lean, uncooked, cubed 8 ozScallions, raw, .25 cup, choppedGarlic powder, 2 TblsOlive Oil, 1TblsChili powder, .25 Tbl
Directions
Clean all bad beans or stones from dry beans. Mix 1 Tbl baking soda (not included in nutritional calculation as it will drained and rinsed off), 1 Tbl garlic powder, with 4 cups water then add vinegar (again, will be drained and rinsed off). Stir. Add both types of beans. (Note: this mixture reduces the amount of gas the beans would otherwise produce, digestively speaking.) Keep in mind, soaking in baking soda increased the beans' salt content, so if you add the addtional salt, do so VERY sparingly.
Cover and set aside to soak for 4+ hours. Stir once in a while to circulate the water around the beans. Beans will plump up somewhat. Drain and rinse; put into crock pot/slow cooker. Add other ingredients. Add water to top serving line of crock pot. Stir well. Cook on high for at least 8 to 9 hours; the beans are done when they are soft but firm enough to barely handle stirring without breaking up. Reduce heat thereafter to prevent overcooking.
