Cucumber Chicken

Ingredients
1-2 lbs Chicken Breast or Tenders2 tbsp Extra Virgin Olive Oil2 tbsp Soy Sauce2 tbsp Garlic1 Lg Cucumber2-3 Bags of Ramen Noodles w/o Flavor Packet
Directions
1) In Lg Skillet add diced Chicken and EVOO, Salt, Pepper to taste, and fresh minced Garlic, and dash soy sauce.
2) In Bowl add diced cucumber, w/ vinegar, soy sauce.
3) In pot of water boil Ramen Noodles for 3 min.
4) Mix all ingredients together in a serving bowl and serve.

Serving Size: Makes 8-12 1/2 C servings
