Number of Servings: 6

Ingredients

    6 chicken thighs (or a whole chicken)
    2 cups (approx.) light coconut milk
    2 cups (approx.) water
    Thai chili sauce, to taste
    1 cup thickly sliced mushrooms
    2 inches of lemon grass (optional)
    About 1 tbsp fish sauce

Directions

Add all ingredients to slow cooker.
Stir to coat chicken.
Cook for 6-8 hours on low or 3-4 hours on high.
Serve with basmati rice and steamed bok choy or broccoli.

    We love this recipe, I have made a stove top version and have been looking for a slow cooker one.
    I doubled it for a "wet n rainy" weekend and it was AWESOME. I added coconut powder at the end for more flavor without the added calories of coconut milk. FANTASTIC!

    Super easy to make, not much of a coconut flavor (which we love). Next time I wouldn't use the water, but just the lite coconut milk. - 3/7/07

    I browned the chicken pieces in c.p. olive oil and added chopped onion and a tsp of curry powder for extra flavour.
    I used full flavoured coconut cream, left out the water.
    This improved the flavour. I loved it cooked in this way.
