Introduction

Ingredients

2 (7 oz) Pkg of Miracle Noodles or shirataki Pasta
2 boneless, skinless, chicken breasts
2 T of Smooth Peanut butter
1/8 c of Soy Sauce low sodium
3/8 c of Vegetable Broth
1/2 T Fresh ground ginger root
1 T finely chopped (minced) garlic
1 T fresh Lime juice, approx. 1/2 lime
1/4 tsp red pepper flakes
1 Red pepper, sliced thin
1/4 or so of fresh Cilantro
3 green onion sliced into 1" long sections
Directions
Shirataki pasta needs some special handling, but worth the zero calorie and no net carbs! Rinse the heck out of these noodles and don't fret over the slightly fishy smell. This to shall pass. Boil about 4 to 6 cups of water and toss in noodles. Boil 3 minutes and rinse again. I then toss them around the hot pot until they dry and then dump them on a clean cotton towel until I'm ready to use them. Some people like to cut them into shorter lengths.
I use my Foreman grill to grill up two small chicken breasts, about 8 oz and then chop or shred chicken. You should get about 1-1/2 cups. In the mean time, heat soy, peanut butter, vegetable broth, ginger, garlic, red pepper flakes and lime juice. Simmer for a few minutes until all peanut butter is fully incorporated. Toss chicken into mixture and then pour over the noodles, mixing well. Add cilantro, green onions and red peppers, give another toss and serve with slices of lime.
