Introduction

Ingredients

    2 tbs lemon juice
    1 (14 oz) can chicken broth
    2 tbs honey
    2 tbs soy sauce
    1 tsp olive oil
    1 medium onion - chopped
    1 cup long grain rice - uncooked
    1/2 tsp black pepper
    1 tbs parsley
    8 skinless chicken thighs

Directions

In a large skillet with tight fitting lid heat olive oil and brown chicken thighs.
Remove thighs when browned and add onion.
Saute until onion is soft.
Add lemon juice, chicken broth, honey, soy sauce, black pepper, parsley, and rice. Stir to combine.
Add browned chicken thighs on top.
Cover and simmer for about 30 minutes or until chicken is done and liquid is absorbed.

    Wow, this was surprisingly awesome! I've had chicken and rice recipes before where the rice turned out bland, but this was so good. The chicken was super juicy, too--at least the part I got to eat. My 18 month old loved it so much he ate most of both mine and DH's portions! - 4/8/10

    One of my fave dishes! I've made it three times already and I suggest using Basmati rice and a red onion and sautéing it really well. I love that you can really use any protein you'd like. - 9/8/11

    This was delicious! Like others, I made it with brown rice, but I cooked the meat and sauce in the slow cooker, then used liquid from that to make the rice instead of water to give it the flavour of the dish. It was easier than cooking it on the stovetop and all I had to do was add a veggie dish. - 8/5/10
