Ingredients

    12 ounces linguine or spaghetti
    1 pound boneless skinless chicken breasts, cut into bite-sized pieces
    1/2 bunch bok choy, chopped
    1 bell pepper, chopped
    2 plum tomatoes, chopped
    1 cup edamame, shelled
    Drizzle of soy sauce
    2 cloves garlic, minced (optional)
    Hot sauce, ex. Sriracha (optional)
    Rice wine vinegar to taste (optional)

Directions

Cook noodles per package instructions.


While noodles cook, saute chicken, bok choy, pepper, tomatoes, and edamame; add soy sauce, as well as garlic, hot sauce, and/or vinegar if desired. Stir fry noodles with sauce, chicken, and vegetables.

    If you want to say a lot of calories, omit the pasta and replace with 2+ cups of shredded lettuce on a plate. I avoid white carbs and have found you can a very satisfying and highly nutritional meal without them. - 7/21/12

    I seldom use pasta so I made this with zoodles and it was quite acceptable. Certainly saves on calories as well. - 9/16/20
