*21 egg roll wrappers*1/2 head of cabbage, cut into 1" cubes*2 cup of carrot strips*2 cups of bean sprouts*2 Tbsp of olive oil
Cook the cabbage, carrot, and beans sprouts in 1ish teaspoons of olive oil, to make the filling. Cover the pan while the veggies are cooking. This will take a while. I generally just check and stir the mix about once every 10 min.
Preheat the oven according to the egg roll wrapper directions.
Fill each egg roll wrapper with some of the filling. Wrap the egg roll wrappers. Fold the end up first and then roll up the wrappers.
Drizzle the remaining oil oil over the egg roll wrappers.
Cook the egg rolls according to the package directions.
Serving Size: Makes 21 large spring rolls
