1.5 lbs baby yukon gold potatoes, whole1 cup frozen whole french green beans1 Tbsp olive oil1 Tbsp apple cider vinegar2 tsp dried parsley1 Tbsp dijon mustard1/4 tsp sea salt (or regular)
Bring water to a boil just covering over the whole baby potatoes. Cook about 15 minutes after it begins to boil or until a fork pierces easily into the potatoes. Throw the frozen green beans in for the last minute of cooking. Rinse and drain and let cool. While potatoes are cooking, combine the olive oil through the sea salt in a large bowl. When potatoes are cooled a bit, cut larger ones in half so they are bite size and toss the potatoes in the vinaigrette. Serves about 4 people.
