Belgian Waffles

Ingredients
1 1/4 cup flour2 tsp baking powder1/4 c sugar4 egg yolks1 1/2 cup milk1 tsp vanilla extract1/2 cup melted margarine4 egg whites
Directions
Preheat waffle iron

Mix together flour, baking powder and sugar in bowl. Set aside.

Beat egg yolks lightly. Add milk, vanilla and melted butter. Drop in the dry ingredients and stir just enough to combine.

In a separate, clean bowl, beat egg whites until they are stiff but not dry and fold them into batter gently.

Bake in seasoned waffle iron at medium heat until the steam stops escaping.

Serve with fresh fruit and light whipped cream or syrup.

    Overall tasty recipe. I'll be making some changes the next time I make them. I used 3 eggs for this recipe and it was still a tad "eggy" so next time I may use less. I also used less margarine and it was still great. - 8/20/09
