* Family Pack of Chicken Thigh/Breast Combo, Boneless, skinless and cut into large strips (Ex: One half Breast cut into 3-4 strips) * Beans, black, 1 can * Cream of Mushroom soup, Low Sodium, 1 can* Onion, White or Yellow, 1 medium * 1 cup uncooked Parboiled Rice* *Extra Light Olive Oil, 4 tbsp * *Artichoke Hearts - quartered, canned, 14 oz (or about a Cereal Bowl-full WITH packaging juice/brine)
In a mixing bowl, combine Cream of Mushroom Soup, 3 cans water and Artichoke Hearts and brine. SAVE about 1/2 cup Artichoke brine. Heat large Frying Pan to Medium-High and add Olive Oil and chicken strips (or chunks), cover while browning but be sure to turn chicken to achieve a more uniform but only slight golden brown. Throw in Chopped Onion and Parboiled rice and heat for about 4 minutes, adding brine during the last 30 seconds or so, Stir briskly and break up chicken into smaller chunks, then add the mixing bowl contents carefully and stir gently. Cover and reduce heat to Low for 20-30 minutes, stirring occasionally. Remove from burner and set aside to rest for 10 minutes. Sure it looks a bit mushy, but it's tasty, kid-friendly, great the next day when reheated in the microwave and VERY filling.
