Chicken Mushroom & Rice soup

2 chicken breast halves, cooked and chopped1 onion, chopped2 large carrots, chopped1 48 oz pkg Safeway Reduced Sodium Fat Free Chicken Broth1/2 cup white wine3 tbsp salted butter1/2 package sliced baby bella mushrooms, chopped1 3/4 cup cooked brown rice1 large bay leafdried thymegarlic powder (substitute 1-2 fresh cloves if you have them)fresh ground pepper
In a non-stick Dutch oven, melt butter. Then add carrots, onion and garlic (if you have fresh garlic, even better!), pepper and thyme. Saute until veggies are soft, then add mushrooms until they are cooked. Add broth, bay leaf and chicken, bring to a simmer for about 45 minutes. Add wine and rice, simmer another 15 minutes and let cool. Remove bay leaf and Serve.
