Curry Chicken (without dairy)

4 Skinless, Boneless Chicken Breast1 medium Onion (diced)1 Green Pepper (diced)4 Celery Stalks (diced)2 19 oz Stewed Tomatoes (I like Italian seasoning)4 tbsp Curry Powder2 tbsp Olive OilS & P to taste2 cups Rice
Cut chicken breasts into cubes and cook in 1tbsp of oil. Remove from pan and set aside. Sauté onions, peppers and celery for 5 min or until soften slightly. Combine Chicken with vegetables and add stewed tomatoes, curry and salt and pepper. Add more curry if you like it hotter. Let simmer on low for 15- 20 min while your rice is cooking.
To server, place rice in the bottom of a plate or bowl and pour the curry mixture over the rice.
