Creamy Spinach Linguine

1 10-16oz package of frozen spinach thawed(with moisture squeezed out)1 box of Whole Wheat linguine3 cups fat free Half and Half1Tbsp Unsalted Butter1Tbsp Flour1 large clove of garlic finely minced1 cup Fontina Cheese1/2 cup Mozzarella Cheese (part skim)
In a large stock pot cook the pasta until desired tenderness. Do not drain.
While past is cooking, melt butter in a large skillet over medium heat. Add flour and cook for 1-2 minutes. Add garlic and cook for another minute. Add in cream and bring to a simmer, stirring frequently.
When cream has reduced and is heated through, about 7-10 minutes, add in cheeses and stir until melted.
Add in Spinach.
Add pasta into the skillet, reserving water, and toss until well coated. If sauce is too thick, add a half ladle of pasta water and stir until desired thickness.
Serving Size: Makes 8-10 1 cup servings
