White Bean and Arborio rice Soup

3tbs olive oil1/3 cup arborio rice3 cups vegeatable broth2 cups red cabbage1 bay leaf1 piece wheat bread1/8 pine nuts1 15.5 oz cannellini beans
1. heat olive oil in pot over medium heat add rice and saute 6 minutes or until toasted, stirring occasionally. stir in garlic and cook 2 minutes. add broth, cabbage and bay leaf cover and bring to a boil. reduce heat to medium-low and simmer 10 minutes.
2. pulse bread and pine nuts until small crumbs form
3. heat remaining 1tbs oil and add breadcrumb mixture and saute 5 minutes or until breadcrumbs are crisp and toasted.
4. add beans to soup and cook 5 more minutes or until rice is tender. remove bayleaf and stir in 1/2 of the bread crumbs season w/ salt and pepper if desired.
add some bread crumbs to soup when it is the bowl
