2 tsp olive oil1 c chopped onion1 cup diced carrots1 c celery2 cloves garlic - minced1/4 c flour1/2 tsp oregano1/4 tsp thyme1/4 tsp poultry seasoning4 c vegetable broth5 c water3 c potatoes - peeled and diced1 1/2 tsp salt2 c diced morningstar chicken strips 1 c soymilk - plain2 c wide noodles
Heat olive oil in 5 qt soup pot. Add onions, carrots, celery, and garlic; saute 5 minutes.
Sprinkle flour and spices over veggies and cook 1 minute.
Stir in broth and potatoes. Bring to a boil; reduce heat, and simmer, partially covered 25 minutes or until potatoes are tender.
Add chicken strips and noodles and cook 10 minutes or until noodles are tender.
Turn off stovetop, cool for a few minutes, and then slowly stir in soymilk.
