Yellow Split Pea with Country Ham

Ingredients
150g country ham, chopped1 large onion, diced2 small potatoes, diced2 carrots, chopped8 cups chicken broth2.5 cups dry yellow split peas1 bay leaf1 teaspoon dry mustardpepper to taste
Directions
In a large sauce pan or small stock pot, over low heat warm the ham, once the ham begins to brown, add in the onion and sauté until tender. Add carrots and potatoes, cook for five minutes. Add broth, split peas, mustard, bay leaf and pepper, bring to a boil, then reduce heat and cover, simmer for an hour, stirring occasionally.
