Dairy & Egg Free Apple-Oat Muffins

Ingredients
1 cup uncooked quick oats1 cup all-purpose flour1 teaspoon baking soda1 teaspoon cinnamon1/2 teaspoon allspice1 pinch salt1/2 tsp. Ener G Egg Replacer and 2 Tbsp water mixed (or 1 egg)1/4 cup soymilk (or other milk)1/4 cup oil1/3 cup honey2 medium apples, peeled and finely diced
Directions
Preheat oven to 400. In a large bowl, mix oats, flour, baking soda, cinnamon, allspice and salt. In a medium bowl, mix egg replacer. Add soymilk, oil and honey to egg replacer and blend well. Stir medium bowl ingredients into oat mixture until thoroughly moistened. Fold in apples. Spoon batter into muffin cups until 3/4 full. Bake for 12-15 minutes.
