2 cups Potato Grated1 Cup Carrots Grated1 Cup Zucchini Grated1 Cup Sliced Mushrooms1.5 Cups Low fat Cheese Grated2 Green Onions1 Egg2 Egg Whites1 cup Bread CrumbsTomato slicesPepper Slices
Directions
Mix All Ingredients into Bowl Except Tomato and Yellow Peppers, Save 1/2 cup of Cheese for Topping...Lightly Grease Pie Pan place ingredients in, top with this tomato and Pepper slices, sprikle Remaining cheese on top bake for 35-40 min @ 350 F. I used 2 small pie Shells and 1 Large to get 14 slices
