Debbi's Split Pea & Ham Soup

Ingredients
1-16 oz. pkg. of green split peas8 cups H2O3/4 c. celery, chopped3/4 c. onion, chopped25 (more or less) baby carrots, cut as you likepotatoes, peeled, washed, cubed
Directions
Put ham bone in dutch oven or soup kettle with water. Add other ingredients - adjust quantities if you like more/less of an ingredient. Bring to a boil and then turn down heat; cover and simmer. Soup will become creamy. Take care that soup does not stick to bottom as it thickens. Extremely low heat works best once it simmers. Turn off; serve. Yummy!
