1 zucchini, diced.25 cup button mushrooms, diced2 wedges Laughing Cow Garlic & Herb cheese.25 cup gluten free cornflake crumbs (I use Southern Homestyle)2 portobello capsI can't believe it's not butter to sautesalt and pepper to taste
Saute' diced veggies with a few sprays of I can't believe it's not butter spray. When sauteed, remove from heat and add salt and pepper to taste. Add wedges of cheese and mix. When mixed, add cornflake crumbs. Top portobello caps with mixture and broil till bubbly.
