Garlicky Broccoli Rabe

4 c broccoli rabe, washed and coarsely chopped1 T olive oil (or more if necessary)1-2 cloves garlic, sliced thin.5-1 t crushed red pepper
Bring 3 quarts of water to a boil in a large stockpot. Add a few pinches of salt, and add broccoli rabe to boiling water.
After 3 minutes, drain broccoli rabe. Rinse stockpot with cold water to cool, then fill with cold water. Return broccoli rabe to the cold water to stop cooking process. Take the greens out a handful at a time, squeezing gently to remove all water and place back in the drainer.
Heat olive oil in a skillet or saute pan over medium low heat. Add garlic and crushed red pepper, saute carefully until garlic just begins to turn a light tan color. Add the broccoli rabe, stir to coat well in olive oil, and heat through. Serve immediately.
