Spiced Apple Cranberry Oatmeal

1.5 cups uncooked old fashioned oats (not instant)2.5 cups water1/2 teaspoon ground cinnamon1/2 teaspoon ground ginger1/8 teaspoon ground nutmeg1/8 teaspoon ground cloves1/4 teaspoon salt (optional)1 apple, chopped (I use granny smith).5 cup dried cranberries4 teaspoons brown sugar
1. In a medium saucepan, combine water, cinnamon, ginger, nutmeg, cloves and salt (if desired). Bring water to a boil.
2.Add oats to water and stir. Return to a boil and then reduce to a simmer. Add apples and cranberries to the saucepan and cook over medium heat for 5 minutes, stirring occasionally.
3. Remove saucepan from heat and add brown sugar. Stir to combine thoroughly.
*Optional: can be topped with milk or yogurt, or sprinkle with chopped nuts for an extra protein boost!
Serving Size: Makes 4 servings (approx. 3/4 cup each)
