Cabbage Soup provencale

Ingredients
1 large can stewed tomatoes(4 cups)6 cups Savoie cabbage2 cups celery, diced2 cups onion, diced1 cup spinach, chopped1 cup green pepper 1 cup red bell pepperblack peppersalt to taste8 cups water or homemade chicken stock (unsalted) 1 to 2 tsps herbs of provence (or to taste)
Directions
1. Place oilvie oil in large pot add onions and cook until transparent.
2. Add all the other vegetables and cook on medium heat 5-7minutes
3. Add spices and water. Bring to a simmer and cook on low for 20-30 minutes to let the flavours develop.
