Asparagus, Ham, and Brie Omelet Cups

Ingredients:Egg, fresh, 12 large (remove)Onions, raw, 1 cup, chopped (remove)Asparagus, fresh, 3 cup (remove)*Canola Oil, .25 cup (remove)Brie Cheese, 8 oz (remove)Ham, regular (11% fat), 2 cup, diced (remove)
Sauté ham, asparagus, and onion in oil until onion and asparagus are tender. Pre heat oven to 400 degrees F. While the omelet cup filler is cooking, spray 18 muffin tins with non-stick spray. Crack 12 large eggs into a bowl and mix to combine. Dice brie into 1/4 inch cubes.
Place 1 and a half T of filler in the bottom of each tin. top with 1/8 c of egg mixture and top with three to four cubes of cheese. Top with salt and pepper. Bake for 18 - 20 minutes.
Serving Size: Makes 18 Omelet cups
