Dash ground black pepper1/4 TBS Dijon-style mustard1/4 TBS Italian salad dressing, low fat1/4 TBS olive oil4 oz pork loin chopThinly sliced onion, about 3 small slices
Trim excess fat from chop.
Combine mustard, dressing and pepper. Brush both sides of chop with mixture.
Add chop to skillet with olive oil and cook covered, over medium-low heat for 20 mins. Turn over and add onions for 5-10 minutes, covered.
Serve topped with onion slices and pan juices.
Serving Size: 1 serving, 4-oz chop
