Chicken and Dumpling Soup

6 chicken thighs, boneless and skinless cut into 1 inch pieces2 carrots, sliced3 potatoes, skinned and diced1 packet Grace cock soup mix1 packet Grace Pumpkin Beef mix6 cups water2 tsp hot sauce (we use Sriracha Thai Chilli Sauce)Dumplings:1 cup flour0.25 cup cornmeal0.25 cup cold water
Bring 6 cups water to boil in large pot.
Sift together flour and cornmeal. Add water 1-2 Tbsp at a time and mix together until you have a nice doughy ball. Break off 2 inch pieces, roll into balls and flatten with palm of hand.
Once water is boiling, add chicken, carrots, potatoes, soup mixes, and dumplings. Simmer and cook for about 1 hour.
Add hot sauce as desired when serving.
Serving Size: makes 8 1-cup servings
