Basic Mixed Green Salad with Oil & Vinegar Dressing

4 cups mixed greens8 small tomatoes, quartered (I like campari tomatoes)4 mini cucumbers, sliced (or 1 cup large cucumber)1 cup sliced sweet bell peppers (I like to use all the colors to make the salad more appealing - red, yellow and green)3-5 sprigs dill weed, chopped3-5 sprigs parsley, chopped3-5 sprigs cilantro, chopped1/2 tsp salt (or to taste)1/2 tsp black pepper (or to taste)1/2 tsp paprika (or to taste)2 tbsp extra virgin olive oil2 tbsp balsamic vinegar---1/2 sliced red onion (optional) - not in nutritional valuesother spices to taste (optional) - not in nutritional values
Wash and clean the vegetables and herbs. Quarter the tomatoes, slice the peppers into strips, slice the cucumbers, chop the herbs and put everything in a bowl. Sprinkle with salt, pepper, paprika and other spices to taste, add the olive oil and vinegar and mix well.
