1 cup chickpeas (either soak dryed ones or use canned)1 cup chopped kale or other green such as collard or spinach1-2 chopped carrots2 tbsp oil 1 tbsp curry powder (or more if you prefer it spicier)salt and pepper to taste1/2 oz grated parmesan cheese (optional)
heat oil in pan and stir fry chickpeas, carrot and kale until tender, mix in curry powder, salt and pepper. Top with Parmesan cheese if desired.
