Introduction

Quick and easy curry dish that is high in protein and complex carbs for very few calories and fat!!! Quick and easy curry dish that is high in protein and complex carbs for very few calories and fat!!!
Number of Servings: 1

Ingredients

    Earth Balance Natural Buttery Spread, .5 tbsp
    Onions, raw, .25 cup, chopped
    Tofu, 79 grams or one serving
    Mushrooms, fresh, 6 medium, sliced
    Curry powder, 1 tsp
    Organic Brown Rice, 1 cup leftover or precooked
    Basil, 1 tbsp

Directions

Heat sauté' pan with 1/2 T Earth Balance. Add onions and cook 3-4 minutes, add tofu and cook another 3-4 minutes, stirring often. Add mushrooms and cook for 2-3 minutes. Add rice and curry powder. Stir well and cook an additional 3-4 minutes. Add 1-2 T of water if needed for moisture. Top with chopped basil and serve.

    I thought this was pretty bland - maybe it's because I used dried basil instead of fresh, but it really needing more seasoning or spices! - 2/9/10
