Introduction

Ingredients

    Earth Balance Natural Buttery Spread, .5 tbsp
    Onions, raw, .25 cup, chopped
    Tofu, 79 grams or one serving
    Mushrooms, fresh, 6 medium, sliced
    Curry powder, 1 tsp
    Organic Brown Rice, 1 cup leftover or precooked
    Basil, 1 tbsp

Directions

Heat sauté' pan with 1/2 T Earth Balance. Add onions and cook 3-4 minutes, add tofu and cook another 3-4 minutes, stirring often. Add mushrooms and cook for 2-3 minutes. Add rice and curry powder. Stir well and cook an additional 3-4 minutes. Add 1-2 T of water if needed for moisture. Top with chopped basil and serve.
