Sweet Potato and Kale Soup, Vegan

1 sweet potato chopped3 cups chopped kale1/2 yellow onion, chopped2 cloves of garlic1 tbsp olive oilsalt to tastepepper to tastegreek yogurt or sour cream to top
saute garlic (chopped) for a few minute until brown, add onion and saute until translucent. Add sweet potato and cover with water. Simmer covered until sweet potato is soft enough to stick a fork in. Add kale for a few minutes until tender. Add water to just below level of veggies. Add salt and pepper to taste. Turn stove off and blend with hand blender. Enjoy! Serve with dollop of greek yogurt or lowfat sour cream.
