1 C qunioa2 C water1/2 c chopped cauliflower1/2 c chopped carrots1/2 large or 1 medium tomato chopped10 spears of asparagus (steamed)1 scallion, chopped1 teaspoon olive oil2 teaspoons mustard seeds1 teaspoon coriander 2 tablespoons lemon juicesalt to taste
Add olive oil to a pot large enough to hold at least 4 cups of food. When hot add mustard seeds - they should pop and crackle (30 seconds or so). Add quinoa and water, stir, add coriander or other spices, bring to boil. Add cauliflower and carrots, and stir. Cover pot and lower heat to low and let simmer for 20 minutes. Turn off heat add tomatoes and asparagus, stir, cover for 10 minutes. Add lemon juice (or lime juice), scallion, and salt to taste. Stir and enjoy!
