Low Cal Dutch Cabbage Rolls

Ingredients
1 pound lean ground beef (90% or higher)1/3 cup uncooked rice1/4 cup Egg Beaters (equiv to 1 egg)1 small onion, finely chopped1 lemon, juice only1 can Progresso Healthy Classics Tomato Garden soup mix1/2 cup celery, finely chopped1 pack Splenda sweetener1 tsp dried parsley6 large cabbage leavesSalt and pepper to taste
Directions
1) Combine ground beef, salt pepper rice and egg beater in bowl and mix well
2) Spray saute pan with Pam and saute onion until soft
3) Boil cabbage leaves unitl tender
4) Add soup (and water if uing condensed can), celery, parsley, lemon juice, Splenda and salt/pepper to pan and heat for 10 min
5) Place mix in crock pot and set to LOW
6) Take cabbage out and pat dry, add equal amount of beef mix to each leaf and roll tightly, secuing each leaf with toothpicks
7) Put rolls in crock pot and cover with sauce. Cover and cook for 4 hours
