Quinoa and Veggies

Ingredients
1/2 onion, or 1 c., choppedBell pepper, 1/4 c., chopped1 tsp or less salt1 oz, about 24, almonds, chopped in half1 oz cubed cheese1 c. uncooked quinoa
Directions
Cook quiona in boiling water for 15 minutes, or until done. IN an iron skillet, fry onions, bell pepper, salt, oregano, lime seasoning, basil and other desired flavorings. Add a little olive oil if nessecary. Toss veggies and quinoa, and top with almonds and cheese. If serving it cold, don't add the cheese until it cools off a little bit.
